Lime and Peppercorn Simple Syrup  

Sometimes simple is just better, and you can’t get much more simple than this lime and peppercorn simple syrup.

Absolutely perfect in a Gin and Tonic, the dehyrdated limes add that classic zest, while the peppercorns finish with a lovely bite at the end. 

Whilte we love it in a riff on a classic Gin and Tonic, be sure to also try it in a Mojito!

  • 3 to 4 dehydrated limes
  • 2 to 3 tsp of peppercorns
  • 16 oz of water
  • 16 oz of white sugar
  • 3 to 4 dehydrated lime wheels
  • 2 to 3 tsp of peppercorns
  • 500 ml of water
  • 500 ml of white sugar
  • 3 to 4 dehydrated limes
  • 2 to 3 tsp of peppercorns
  • 1 part water
  • 1 part white sugar

Combine the water and the sugar in a small sauce pan, at medium heat. Bring to a simmer, until the sugar has completely dissolved. Next add the dehydrated limes and peppercorns, and lower the heat. Simmer for at least 15 minutes, or until desired intensity. The longer you let your ingredients simmer, the more intense the flavour. 

If you want to up the spicy factor, try muddling the peppercorns first, and than straining through a cheesecloth at the end. 

This syrup will keep up for at least two 2 weeks, stored in a sealed jar.
