Lavender & Strawberries

Strawberry & Lavender Simple Syrup  

This riff on a simple syrup is perfect for creating a Gin & Tonic that screams spring, with great floral and sweet fruit notes.

The great thing about this syrup is not only is it, well, just delicious, it also adds a great pop of colour to your cocktails, ensuring that everyone will want a taste.

Not a fan of gin? We suggest trying this syrup in a Margarita, as it also goes great with lime juice.

  • 2 oz of Freeze Dried Strawberries
  • 1 to 2 tsp of lavender
  • 16 oz of water
  • 16 oz of white sugar
  • 1/4 cup of Freeze Dried Strawberries 
  • 1 to 2 tsp of Lavender 
  • 500 ml of water
  • 500 ml of white sugar
  • 1/4 cup of Freeze Dried Strawberries 
  • 1 to 2 tsp of Lavender
  • 1 part water
  • 1 part white sugar

Combine the water and the sugar in a small sauce pan, at medium heat. Bring to a simmer, until the sugar has completely dissolved. Next add the strawberries and lavender, and lower the heat. Simmer for at least 15 minutes, or until desired intensity. The longer you let your ingredients simmer, the more intense the flavour. 

This syrup will keep up for at least two 2 weeks, stored in a sealed jar.
