Lemon and Thyme

Thyme and Lemon Simple Syrup  

Making a syrup for cocktail shouldn’t be a complicated process, though it can be intimidating. 

But adding flavour to a simple syrup is actually pretty easy!  

The great thing about this syrup is not only is it bright thanks to the dehydrated lemons, but the thyme adds a warmth and depth that goes with several different spirits.

We love it in a riff on a classic Gin and Tonic, but also try it in a warm Hot Toddy for great results!

  • 2 to 3 dehydrated lemons
  • 1 to 2 tsp of Thyme
  • 16 oz of water
  • 16 oz of white sugar
  • 2 to 3 dehydrated lemon wheels
  • 1 to 2 tsp of Thyme
  • 500 ml of water
  • 500 ml of white sugar
  • 2 to 3 dehydrated lemons
  • 1 to 2 tsps of Thyme
  • 1 part water
  • 1 part white sugar

Combine the water and the sugar in a small sauce pan, at medium heat. Bring to a simmer, until the sugar has completely dissolved. Next add the thyme and lemon peels, and lower the heat. Simmer for at least 15 minutes, or until desired intensity. The longer you let your ingredients simmer, the more intense the flavour. 

This syrup will keep up for at least two 2 weeks, stored in a sealed jar.
